Carme Ruscalleda
Spanish chef and restaurateur from Catalonia
Biography
Carme Ruscalleda Serra (San Pol de Mar, Barcelona, born 1952) is one of Spain's most celebrated chefs and the only woman in the world to hold seven Michelin stars. Her career, rooted in Catalan cooking, shows how a family business can grow into an international reference for author cuisine.
She came from a family of farmers and traders. She trained in charcuterie and commerce and joined the family delicatessen alongside her husband, Toni Balam. She soon added a section of home-style dishes to take away and, in July 1988, the couple opened the restaurant Sant Pau in a tower across from the shop. Much of her cooking knowledge was self-taught, learned at the stove of her own restaurant.
The restaurant earned its first Michelin star within three years, its second in 1996 and its third in 2006. In 2004 she opened a Catalan restaurant, also called Sant Pau, in Tokyo, and her trips to Japan led her to explore Japanese culinary techniques and adapt them to Catalan produce. Her cooking is grounded in Catalan tradition, follows the seasons and keeps an eye on healthy eating. She often links her dishes to literary references.
Today her restaurants hold seven stars: three at Sant Pau, two at Moments in Barcelona, where her son Raül Balam leads the kitchen, and two at Sant Pau in Tokyo. She has also written cookbooks for a general readership, including Cuinar per ser feliç (2001), and in 2023 the University of Barcelona made her an honorary doctor in recognition of her career and her work preserving Catalan cuisine. Her legacy spans haute cuisine, public education and the defence of Catalan gastronomic tradition.
