Zelten

🥚 Vegetarian

Zelten is a fruitcake of nuts and candied fruit from the Trentino-South Tyrol area of northern Italy. It is traditionally baked for special occasions, above all at Christmas, and is a point of pride for local pastry making.

History

The name is usually linked to the German word selten, meaning 'seldom', a reference to the fact that it was made only on special occasions. It began as a winter sweet, when more nuts were available, and over time it became an established local specialty.

The recipe was already recorded in cookbooks in the early twentieth century, and a manuscript held at the public library in Rovereto describes its preparation. The dough usually combines flour, egg, butter, sugar and yeast, while the fillings vary from one area to another.

Culture

Zelten is part of the Christmas table in Trentino and South Tyrol, and each family or bakery has its own version. Among the most common ingredients are walnuts, figs, almonds, pine nuts and sultana raisins. Its link to the winter nut harvest remains strong, and it is still baked in pastry shops across the region.
